Ingredients:


2 medium green bell peppers washed -- seeded, and cut into 1 inch cubes

1 medium cucumber peeled and cut into 1 inch cubes

3 medium tomatoes washed and cut into 1 inch cubes

2 stalks celery washed and sliced diagonally into 1/2 inch piece

1/4 pound feta cheese -- cut into 1/2 inch cubes

1/2 medium red onion -- diced

1/2 teaspoon kosher salt

1 teaspoon freshly ground pepper

3 tablespoons vinegar

1/4 cup oil

1/2 teaspoon oregano

1 tablespoon fresh basil -- minced
 

Preparation / Directions:


In a 2-quart bowl, mix peppers, cucumber, tomatoes, celery, feta cheese, and red onion. Season with salt, pepper, vinegar, oil, oregano, and basil.
