Heringsalat (Herring Salad)

Ingredients:


8 ounces pickled herring -- drained

1/2 medium green pepper -- seed and dice

1 medium apple tart -- core and dice

1 medium orange -- sectioned and diced

2 teaspoons onion -- grated

2 tablespoons vegetable oil

1 tablespoon vinegar

4 bunch lettuce leaves -- cupped
 

Preparation / Directions:


Combine ingredients and marinate in refrigerator for at least 1 hour. Serve on inner tightly cupped lettuce leaves.
