Pineapple-Zucchini Bread

Ingredients:


3 large eggs

1 1/2 cups sugar

3/4 cup oil

2 teaspoons vanilla

3 cups flour

2 teaspoons baking powder

1 teaspoon soda

1/2 teaspoon salt

1/2 teaspoon nutmeg

2 cups zucchini -- grated

1 can crushed pineapple (8 oz.) -- drained well

1/2 cup chopped nuts

1/2 cup raisins
 

Preparation / Directions:


Cream together the eggs, sugar, oil and vanilla. Mix; add flour, baking powder, soda, salt and nutmeg. Add zucchini, pineapple, nuts and raisins. Pour into two 8-inch greased loaf pans that have lined with wax paper. Bake at 350 degrees for 1 hour.
