Ginger Pear and Apple Sauce

Ingredients:


2 teaspoons vegetable oil

2 whole shallots -- minced

2 teaspoons grated peeled gingerroot

1 dash ground allspice

1 dash salt

1 dash freshly ground pepper

3 whole pears -- peel, core, chopped

1 whole McIntosh apple -- peel, core, chopped

1/2 cup apple juice

1/4 cup dry white wine

1/4 teaspoon grated lemon zest
 

Preparation / Directions:


In a medium nonstick saucepan, heat the oil. Saute' the shallots, gingerroot, allspice, salt and pepper until the shallots are softened, about 3 minutes. Stir in teh pears, apple, apple juice, wine and lemon zest; cook, s tirring gently, until the fruit is very tender, about 15 minute
