Preparation / Directions:Combine sugar and water in a small saucepan. Bring to a boil, and boil until sugar is dissolved to make a sugar syrup. Remove from heat; let cool. Add chilies, red bell pepper, lime juice and minced mint. Mix well. Pour over chilled melon. Garnish with mint leaves and peppers. Makes 6 to 8 servings.
