Dried Apricot Marmalade

Ingredients:


3 packages dried apricots -- (6 oz.) moist and bright orange

1 Can crushed pineapple -- drained -- (20 oz.)

6 Cup water

2 medium juice of 2 lemons

7 Cup sugar

1 Cup chopped pecans

1 Cup cherries -- cut in half, pat dry
 

Preparation / Directions:


Cut or grind apricots into small pieces. Soak apricots in water overnight (after cutting). Add lemon juice to pineapple and let stand for 2 hours more. Bring to a boil and add sugar, stirring constantly. (Be sure your boiler is large enough as this boils up.) Boil for 30 minutes and test. (I put a teaspoonful in a saucer and put in freezer until cool, move around to see if thick enough if not, I continue to cook a little longer.) If apricots are tart, they thicken quicker. When ready, put into dry, hot jars. (I heat mine in a hot oven.) Seal with paraffin. Note: Add nuts and cherries 5 minutes before you finish cooking. Makes lovely gifts.
