Banana Fritters

Ingredients:


1 1/4 cups all-purpose flour -- sifted

1 1/2 teaspoons baking powder

1/4 teaspoon salt

2 tablespoons sugar -- heaping

1/2 cup milk

2 large eggs

10 medium bananas -- about

2 tablespoons vegetable oil for deep-fat frying

2 tablespoons confectioners sugar
 

Preparation / Directions:


1. Combine flour, baking powder, salt and sugar; sift three times. 2. Add milk and eggs; mix well. 3. Cut bananas into quarters and dip in batter; drop into hot oil, at least 1 inch deep, and fry until golden brown on both sides. 4. Drain and dust with confectioners' sugar to serve.
