Ingredients:


4 slices bacon -- cut in small pieces

1 large onion -- sliced

4 slices Canadian bacon -- cut in small pieces

4 medium green peppers -- cut 1/2 inch wide strips

28 ounces canned tomatoes -- drained and mashed

1 clove garlic -- crushed

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

2 tablespoons fresh bread crumbs

1 tablespoon butter

8 large eggs -- slightly beaten

4 slices French bread -- fried in butter
 

Preparation / Directions:


Heat bacon in large, heavy skillet. Add onions and cook until they become transparent. Add Canadian bacon, peppers, tomatoes, garlic, salt, and pepper. Cook for 30 minutes, stirring occasionally. Add bread crumbs and continue cooking for 15 minutes. In another heavy skillet, heat butter. Add eggs and cook briskly, stirring gently with a fork, until eggs are set. Stir in mixture from other skillet. Garnish with fried French bread slices. Serve hot. Comments: "Piperade" is a very special kind of omelet which is made in a variety of ways, in the whole South of France.
