Shrimp Creole

Ingredients:


3 Tablespoons butter or margarine

1 Cup onion -- chopped

1 Medium green pepper -- chopped

1/2 Cup celery -- chopped

1 Clove garlic

1 Can tomato sauce -- (8 ounce)

1/2 Cup dry red wine

2 Tablespoons parsley -- snipped

1/2 Teaspoon salt

1/4 Teaspoon pepper

1 Dash hot sauce

1 Pound shrimp -- shelled and deveined
 

Preparation / Directions:


Place butter, onion, peppers, celery and garlic in a 2 quart casserole. Cover. Microwave at high (100%) until peppers are tender, 3 to 4 minutes, stirring once during cooking time. Stir in tomato sauce, wine, parsley, salt, pepper and hot sauce. Microwave at high (100%) until hot and bubbly, 4 to 5 minutes, stirring once during cooking time. Add shrimp. Microwave at medium high (70%) until shrimp are pink, 5 to 6 minutes. Serve over hot rice. Makes 4 servings.
