Lemon-Dill Fish Fillets

Ingredients:


4 fillets orange roughy or other lean white fish fillets 4 ounce

1 spray vegetable cooking spray

1/4 teaspoon salt

1 recipe lemon-dill coating -- (see below)

1 medium lemon wedges -- (optional)

---lemon dill coating ingredients

2 cups finely crushed plain melba toast rounds

2 tablespoons paprika

2 tablespoons grated lemon rind

4 teaspoons dried whole dillweed

1 1/2 teaspoons dry mustard
 

Preparation / Directions:


FOR FISH: Coat both sides of fish with cooking spray; sprinkle with salt. Place 1/2 cup Lemon-dill Coating in a shallow dish; dredge fish in topping. Place fish in an 11 x 7 x 2-inch baking dish coated with cooking spray. Bake at 400F for 15 minutes or until fish flakes easily when tested with a fork. Yield: 4 servings. FOR LEMON-DILL COATING: Combine all ingredients in large zip-top heavy-duty plastic bag; seal bag, and shake well. Store tightly sealed in refrigerator; shake well before each use. Yield: 2 cups (serving size: 2 tablespoons).
