Fish In Pecan Sauce

Ingredients:


1 cup dry white wine

1/2 cup water

1 piece bay leaf

4 whole peppercorns

2 pounds fish fillets -- mild and firm

1 medium Onion -- sliced

2 cloves garlic

1/2 cup pecans

2 tablespoons parsley

1/4 teaspoon saffron

1 teaspoon salt -- to taste

1/4 teaspoon ground mild red chile

1 medium lemon -- juice of
 

Preparation / Directions:


In large skillet combine first 5 ingredients. Simmer 10 minutes Add the fish and simmer until fish flakes. Place fish on a serving platter. Remove the peppercorns and bay leaf from liquid, then pour liquid into blender. Add remaining ingredients and blend until smooth. Spoon sauce over fish. Can be garnished with lemon wedges and cilantro leaves.
