Preparation / Directions:Remove the yolks from the halved eggs, reserving the whites, and place them in a small bowl. Mash them thoroughly, then blend the mayonnaise, the two mustards, the chopped gherkins, spring onion and seasoning to taste. Spoon the mixture into the egg-white halves and garnish decoratively with the capers and paprika.
