Oven Fried Sesame Eggplant

Ingredients:


3/4 cup saltine cracker crumbs -- (12 double saltine crackers)

1/2 cup parmesan cheese -- grated

1/4 cup sesame seeds

1/4 teaspoon pepper

1 medium eggplant -- (about 1 1/4 pounds)

1 Cup mayonnaise
 

Preparation / Directions:


Preheat the oven to 400 degrees. Grease a baking sheet. Stir the cracker crumbs, cheese, sesame seeds, and pepper together in a small bowl. Cut off the stem and cap and peel the eggplant. Slice l/2-inch-thick. Spread both sides of each slice with mayonnaise. Dip each side into the crumbs, pressing lightly to adhere. Place them on the prepared baking sheet. Bake for 10 to 12 minutes or until the undersides are golden. Turn the slices over and bake 5 to 7 minutes longer, or until they are golden on both sides. Prep Time: 10 minutes Cook Time: 15 to 20 minutes Makes: 4 servings Although they taste fried, the crisp sesame crust that coats these eggplant slices comes from being toasted in the oven.
