Mehlman Cafeteria's Apple Dumplings

Ingredients:


3/4 cup flour -- for sauce

5 cups sugar -- for sauce

7 cups water -- for sauce

1/2 cup butter -- for sauce

1 teaspoon vanilla extract -- for sauce

1 crust pastry dough -- purchased

6 medium golden delicious apples

1 Teaspoon cinnamon

6 teaspoons butter

1 Teaspoon nutmeg

3/4 cup brown sugar

1 large egg -- beaten
 

Preparation / Directions:


Preheat oven to 350 degrees. Sauce: Mix flour and sugar by hand. Pour water into a pan. Add the flour and sugar and then the butter and vanilla. Heat and mix until sauce boils. Remove from heat. Prepare six 6-inch squares of pie dough. If using frozen or prepared crusts, divide each crust into three equal parts and then roll each into a 6-inch square. Save the scraps. Peel and core apples. Divide the brown sugar into six parts and stuff it into the center of each apple. Place each apple on a square of pie dough. Sprinkle cinnamon over the apple. Place 1 teaspoon of butter on top of each apple, then sprinkle the top of the apple lightly with nutmeg. Fold each corner of the dough to meet in the center of the top of the apple. From dough scraps, cut 12 strips of dough approximately 1/2 by 2- inches and place two strips on top of each apple. Place apples in a baking pan, pour sauce over the top and brush with egg. Bake until apples are tender -- about one hour to one hour and 15 minutes. Serve in a bowl large enough for the sauce to be placed around it, on the side.
