Madeline's Chicken And Dumplings

Ingredients:


4 Pounds chicken -- cut into serving pieces

2 Small carrots -- sliced

3 medium sweet potatoes cut up

3 medium Irish potatoes cut up

1 Whole small onions

---Dumplings:

2 Cups flour

1/2 Teaspoon salt

1 Teaspoon baking powder

4 Tablespoons rendered chicken fat

4 Tablespoons enough water to mix for rolling.
 

Preparation / Directions:


Put chicken in a large pot. Add salt and pepper, a dash of cayenne, a bay leaf and a handful of celery tops. Cover with water and cook until done. Discard bay leaf, add vegetables and continue cooking until vegetables are nearly done. Dumplings: Divide dough into three parts. Roll two parts, cut into squares. Add 1 part to simmer chicken and cook 5 minutes. Add second part and cook 5 minutes more. The third part can be added as another tier of dumplings or used as a top crust.
