Spicy Asian Peanut Dip

Ingredients:


3 cloves garlic chopped

1 cup peanut butter -- chunky or smooth

2 tablespoons brown or white sugar

1 piece fresh ginger root -- 1/2-inch, chopped

1/2 medium jalapeno chile -- chopped (or hot salsa or chili paste to taste)

1/2 cup water

1 tablespoon soy sauce -- to 2 tablespoons

1 tablespoon fresh lemon juice

2 tablespoons chopped fresh cilantro

2 tablespoons Asian -- (toasted) sesame oil
 

Preparation / Directions:


In a blender or food processor combine garlic, peanut butter, sugar, ginger, and chili. Blend well. Add water and soy sauce, and when well mixed add lemon juice, cilantro, and sesame oil. Taste and adjust seasoning if necessary. This recipe serves 4 to 6. Comments: This recipe is sweet and spicy, very versatile, a fine interpretation of the genre. Serve with carrot sticks or "Soy-Marinated Grilled Chicken Wings" (recipe included in this collection). Without the cilantro, this sauce will last up to 2 weeks in a jar in the refrigerator.
