Classic Guacamole

Ingredients:


2 medium avocados ripe

1 clove garlic -- mashed

3 tablespoons fresh lime juice

1 medium jalapeno -- seeded and diced

2 medium tomatoes -- seeded and chopped

1 small red onion -- chopped fine

1/4 cup fresh cilantro leaves -- finely chopped

1 teaspoon salt and freshly ground pepper -- to taste
 

Preparation / Directions:


Halve and pit avocados and scoop flesh into a large bowl. Mash avocado with a fork and stir in remaining ingredients, combining well. Chill covered with plastic wrap for at least 1 hour and up to 1 day. Stir guacamole well and serve with tortilla chips. Yield: about 3 cups
