Cilantro Guacamole

Ingredients:


2 large avocados seeded and peeled

1 small tomato -- finely chopped

1/2 small red onion -- finely chopped

1/2 small red pepper -- finely chopped

1 medium jalapeno chili -- finely chopped

3 tablespoons lime juice

1 clove garlic

1 tablespoon fresh cilantro -- finely chopped

1/2 teaspoon cumin

1/4 teaspoon salt
 

Preparation / Directions:


1. Mash avocados in a mixing bowl. 2. Stir in remaining ingredients and dash of pepper. 3. Cover and chill up to 8 hours. Notes: Makes 2 cups, serve with tortilla chips.
