Shrimp Dip with Crudites

Ingredients:


6 ounces shrimp cooked , drained, divided

1/2 cup cream cheese reduced-fat, softened

1/2 cup green onions thinly sliced, divided

3 tablespoons Caesar salad dressing light or fat-free

2 teaspoons prepared horseradish

1/4 teaspoon salt

2 medium red or yellow bell peppers cut into 2X1 inch pieces

4 large carrots peeled, diagonally sliced 1/4 inch thick

10 pieces crackers crispbread or other low-fat
 

Preparation / Directions:


Reserve several shrimp for garnish. Combine remaining shrimp, cream cheese, 1/3 cup green onions, salad dressing, horseradish and salt in medium bowl; mix well. Transfer to serving dish; top with reserved shrimp and remaining 1 tablespoon green onions. Cover and chill at least 30 minutes before serving. Serve with bell peppers, carrots and crackers
