Eggplant Dip - Luke

Ingredients:


1 medium eggplant -- sliced thinly

1 medium red onion -- thinly sliced

2 medium tomatoes -- sliced (or more)

1 teaspoon salt -- pepper, garlid
 

Preparation / Directions:


Lay eggplant slices on sprayed baking sheet. Cover with onion slices, then with tomato slices. Bake about 1/2 hour at 350, till tender. Cool slightly, and blend. Season to taste. Serve with crackers.
