Tropical Tantalizer Sorbet

Ingredients:


1/2 cup water

4 tablespoons sugar

4 bunches sprigs mint -- leaves removed from

1 stalk yield about 20 mint leaves

2 cups packed diced fresh pineapple

4 tablespoons light rum
 

Preparation / Directions:


Combine water, sugar and mint leaves in a small pan. Simmer ten minutes and then cool completely. Stir in pineapple and rum. Process until pulpy in a blender or food processor. Process in an ice cream freezer according to manufacturer's instruction
