Brandy-Flavored Walnut Flan

Ingredients:


2 cups flour

1 teaspoon salt

2/3 cup vegetable oil

1/4 cup grapefruit soda -- chilled

1 cup walnuts -- chopped

4 large eggs -- beaten

1 cup light brown sugar

1/4 cup corn syrup

1/2 cup maple syrup

1/2 teaspoon kosher salt

1/4 cup unsalted butter -- room temperature

1 tablespoons brandy or brandy extract
 

Preparation / Directions:


Sift flour. Combine sifted flour, oil and salt. Mix well, cover and chill for 30 minutes. Return to room temperature. Add grapefruit soda and mix well. Roll out to desired thickness. Press into a 9 inch pie pan. Prick bottom with a fork. Bake at 350 degrees for 8 to 12 minutes, until slightly dried and golden. Remove from the oven and allow to cool. Sprinkle walnuts into the bottom of the prepared shell. Combine remaining ingredients and mix well. Pour over walnuts to fill two-thirds full. Bake at 350 degrees for 5 minutes. Bake at 325 degrees until set, about 5 to 10 minutes. Remove from oven and allow to cool completely. Serve at room temperature.
