Ambrosia Fruit Custard

Ingredients:


3 ounces sugar free instant vanilla pudding

1 tablespoons lemon juice

1 teaspoon fresh lemon peel -- grated

1/2 teaspoon coconut extract -- or almond extract

8 ounces canned Dole Pineapple Tidbits -- drained

1 cup assorted sliced fruit

1/4 cup mini marshmallows
 

Preparation / Directions:


Make pudding according to package directions. Stir in lemon juice, peel and extract. Reserve 1/4 cup for topping. Spoon remaining pudding equally into 4 dessert bowls. Toss remaining ingredients. Spoon on top of pudding. Drizzle with reserved pudding. Note: Use fruits such as kiwi, strawberries and oranges for the assorted fruit slices.
