Chicken Curry 3

Ingredients:


4 cups chopped chicken -- deboned and skinless

2 tablespoons vegetable oil

1 medium onion -- finely chopped

1 tablespoon crushed ginger

1/2 tablespoon garlic crushed

1 package easy currys chicken curry spice mix*

1/2 tablespoon salt

1/2 cup water -- plus

2 tablespoons water

1 medium finely chopped hot chile peppers -- if desired
 

Preparation / Directions:


1. Heat a non stick pan under medium high heat 2. Add oil and let it get hot. 3. Add onions, stir, and saute for 1 minute. 4. Add garlic, ginger, (chillies if desired), 2 tablespoons water, chicken curry spice mix, stir, cover and saute for 2 minutes. 5. Add chicken, salt, stir and cover. Reduce heat to medium. Simmer for 10 minutes. Stir occasionally. 6. Add water, stir and cover. Simmer for 20 minutes. Stir occasionally. 7. NOTE: If after step 5 the curry is very dry, then add an extra 1/2 cup of water. 8. The curry is cooked when the chicken is tender but not falling apart. Turn off heat. Serve curry on bed of rice or with Indian breads or tortillas. Garnish with cilantro if desired. Serve with the vegetable of your choice on the side. ENJOY!!!
