Palak Shorba (Spinach Soup)

Ingredients:


2 cups chopped spinach

1 medium Onion -- chopped

2 cups skim milk

1 teaspoon salt and pepper -- to taste

2 tablespoons cottage cheese -- (paneer)
 

Preparation / Directions:


Preparation time: 10 minutes Cooking time: 10 minutes 1. Cook the spinach and onion in 1/2 cup of water until soft. 2. Add the milk and blend in a mixer. Strain. 3. Add salt and pepper. Serve hot, topped with grated cottage cheese.
