Preparation / Directions:Cover ginger with water in a saucepan and bring to a boil, turn down heat and simmer until tender, 35-40 minutes. In a large non-aluminum pot, mix ginger water, ginger, sugar, vinegar, and garlic. Bring to a boil and add remaining ingredients. Cook until thick, about 1 1/2 hours.
