Singapore Chicken Satay

Ingredients:


---MARINADE---

2 teaspoons curry powder

2 teaspoons sugar

1/4 teaspoon coriander

1/4 teaspoon cumin

3 tablespoons lemon juice

2 tablespoons soy sauce

2 tablespoons oil

1 clove garlic -- minced chicken:

1 pound chicken breasts boneless skinless -- cut into 3/4-inch pieces
 

Preparation / Directions:


Mix marinade and place chicken pieces in marinade. Marinate in refrigerator for at least 4 hours stirring every hour. Thread chicken pieces on bamboo skewers (soaked in water first). Brush chicken with light coating of vegetable oil and grill over medium coals. Do not overcook. Serve with a spicy peanut sauce.
