Preparation / Directions:
2 or more cups coconut milk (enough to cover meat) 2 Tablespoon cornstarch
1. Brown Beef in light oil over moderately high heat. Set aside.
2. In same pan sautÃ© onion, garlic, ginger, and chilies until soft. Add beef
and curry powder.
3. Add coconut milk, cover and simmer over low heat until meat is tender -
4. Dissolve 2 Tablespoons cornstarch in 3 Tablespoon water. While meat is
simmering, slowly add cornstarch mixture, stirring constantly. This will
thicken the stew.
Serve with white rice and a fresh salad or fruit. Try cooking your rice
1/2 coconut milk and 1/2 water. It's delicious!
note: coconut milk adds a subtle delicacy to most dishes it is used
