Crawfish Etouffee

Ingredients:


1 1/2 sticks butter

2 teaspoon salt

1 tablespoons flour

1 medium onion chopped fine

1/2 medium bell pepper chopped fine

3 cloves garlic chopped fine

1 pound crawfish tails with fat

1 teaspoon salt to taste

1 teaspoon pepper to taste

1 tablespoons Creole Seasoning (the more the better)

4 medium green onions chopped

2 bunches parsley chopped
 

Preparation / Directions:


1. Melt butter in skillet--Add flour and salt until blended. 2. Add onion, bell pepper, and garlic--Cook until tender. 3. Add crawfish and cover--Cook 15-20 minutes on low heat. 4. Add salt, pepper and Creole seasoning to taste--Add green onions and parsley. 5. Simmer until seasoning blends. Serve over rice with hot French bread!! Note: Shrimp may be substituted for the crawfish.
