Ingredients:


1 cup cornmeal

1 cup flour

1 medium onion -- minced

2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 large egg beaten

3/4 cup buttermilk

3 cups vegetable oil
 

Preparation / Directions:


Mix dry ingredients and onion together. Mix in the egg and buttermilk. This will be a thick mixture. Let sit for 1/2 hour. Heat oil in a deep fryer or deep skillet/wok to 375F. Drop by teaspoons into the pan. Fry until golden brown. Drain on paper towels, serve immediately with catsup, butter, malt vinegar or honey I also do variations using minced vegetables in the batter and jalapeno peppers.
