Tangerine And Spice Oatmeal Cookie

Ingredients:


2 large eggs -- lightly beaten

1/2 cup granulated sugar replacement

1/3 cup brown sugar -- lightly packed

2 tablespoons butter or margarine -- melted

1 tablespoon tangerine or orange rind -- freshly grated

1/3 cup tangerine or orange juice -- freshly squeezed

2 cups high-protein cereal

1 1/2 cups quick oats -- uncooked

3/4 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg
 

Preparation / Directions:


Makes about 4 dozen cookies 1. Combine eggs, sugar replacement, brown sugar and butter in large bowl; stir in rind, juice, cereal and oats. 2. Sift together remaining dry ingredients; add to cereal mixture, blending well. 3. Drop batter from teaspoon on lightly greased cookie sheets; bake in preheated 375 F. oven 8 to 9 minutes. 4. Cool on wire racks.
