Golden Honey Carrot Cookies

Ingredients:

1/4 cup shortening

1/2 cup sugar

1/4 cup honey

1 Large egg

1 teaspoon pure vanilla extract

1/2 teaspoon lemon extract

1/4 cup butter or margarine

1 1/4 cups raw carrots -- grated

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

Preparation / Directions:

Makes 3 1/2 dozen cookies 1. Beat together shortening, butter and sugar Until light and fluffy. 2. Add honey, egg, vanilla and lemon extract; beat well. 3. Stir in carrots. 4. Thoroughly mix together flour, baking powder and salt; stir into shortening mixture. 5. Drop by rounded teaspoons onto greased baking sheets; bake in preheated 350 F. oven 10 minutes, or until golden brown. NOTE: These cookies freeze well
