Fool Your Kids Carrot Cookies

Ingredients:


3/4 cup margarine or butter

1 cup all purpose flour -- up to /4-1 3/4

3/4 cup packed brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon baking soda

1/4 teaspoon ground cloves

1 teaspoon vanilla

2 cups rolled oats

1 1/4 cups finely shredded carrots
 

Preparation / Directions:


In mixer beat margarine or butter on medium to high speed until softened. Add half of the flour, sugars, egg, baking powder, cinnamon, baking soda, cloves, and vanilla. Stir in oats. Add enough flour to make soft dough. Stir in carrots. Drop by rounded teaspoonful onto an ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes until golden edges. Cool on wire rack.
