Cucumber Pepper Chutney

Ingredients:


2 pounds english cucumber

2 teaspoons kosher salt

1 cup red bell pepper

1 teaspoon garlic

1/2 teaspoon crushed red chiles

2 teaspoons fresh lime juice

1/3 cup olive oil

1/2 teaspoon apple cider vinegar

1/2 teaspoon sugar

1/2 teaspoon kosher salt

1/4 cup fresh dill weed
 

Preparation / Directions:


halve and seed cucumbers, chop fine sprinkle with kosher salt allow to drain in a collander for 30-45 minutes rinse with cold water and drain well combine cucumbers, bell peppers, shallots, garlic, red pepper flakes, lime juice, and olive oil in a large bowl-mix well add vinegar, sugar, and salt to taste let stand for 60 minutes stir in minced dill serve at room temperature
