Spareribs With Black Beans

Ingredients:


1 pound pork spareribs -- individual ribs cut into 1 inch long pieces -- see * note 1

3 tablespoons soy sauce -- light

2 tablespoons Chinese rice wine or dry sherry

3 cloves garlic -- chopped fine

1 tablespoon dow-see -- rinsed and mashed,

1 dash brown sugar

1/2 teaspoon msg -- (optional)

1 teaspoon sesame oil

1 teaspoon garlic and red chili paste -- or to taste, see *

2 tablespoons cornstarch

2 medium green onions -- chopped

1/2 medium green pepper -- julienne
 

Preparation / Directions:


* Note 1: Have your butcher run the ribs through his band saw. * Note 2: Fermented black beans, available in Asian or Oriental markets. * Note 3: Available in Asian or Oriental markets. Place the sparerib pieces in a colander and pour two quarts of boiling water over them. Do this in the sink. Drain them well and stir-fry or pan-fry until lightly browned. Drain the fat and place them in a bowl. Add all other ingredients except the onions and green pepper. Mix well, then add the onions and pepper. Place in a steaming dish and steam for 1 hour 15 minutes. They will be very tender and delicious. This dish, popular even at formal Chinese dinners, must be chewed on and the flavor is wonderful.
