A succulent chicken breast on a bed on mash and crunchy vegies topped with marinated prawns and a creamy homemade prawn sauce. | |||||||||||||||||||
Ingredients:

Preparation / Directions:Potatoes: wash peel and dice. place into salted boiling water. when tender, drain and mash with salt to taste, pepper, milk and butter to make creamy mash.
Prawns: peel shells(save heads and shells), but leave tail on. devein and wash. marinate in touch olive oil, salt, pepper and garlic salt. cover and place in fridge.
Chicken: pound flat using a mallet. marinate with salt, pepper, lemon pepper, paprika and chicken salt and on both sides.cover and place in fridge.
Prawn sauce:melt some butter in pan. Toss in the prawn heads and shells. salt and pepper to taste. add the cream and worstershire sauce. dissolve the tomatoe paste in a bit of hot water and add to cream when boiling. taste. add anything else u desire if needed.
vegies:( steam or place in salted boiling water for a few mintues until just tender, drain and set aside.
chicken: just cover the fry pan in the canola and olive oil. when hot, pan fry breast on both sides, when finished, move onto prawns.
Fryt eh prawns in a touch olive until they change colour. do not cook for long as prawns get rubbery.
to serve: pace mash on bottom of plate and spread out. place chicken breast on top of mash and steames vegies on the side. place 4 prawns on top of beat and strain the sauce and drizzle on top of prawns and let it pur naturally over the chicken.
