Preparation / Directions:
Place butter, onion and pepper in a small casserole. Microwave at high
(100%) until tender, 3 to 4 minutes. Combine ginger and corn starch. Add
vinegar, soy sauce and preserves. Stir into onion and pepper. Microwave at
high (100%) until hot and bubbly, 1 to 2 minutes. Set aside.
Place chicken pieces in an oblong casserole, skin side down, with thicker
portions to outside edge of dish. Cover with wax paper. Microwave at medium
high (70%) 12 minutes. Drain. Turn chicken pieces over, keeping thicker
portions to outside edge of dish. Spoon sauce over chicken. Cover with wax
paper. Microwave at medium high (70%) until chicken is tender, 12 to 15
minutes. Stir in pineapple. Microwave at medium high (70%) until pineapple
is heated, 2 to 3 minutes. Serve with rice.
