Spicy Indonesian Chicken Skewers

Ingredients:


6 medium chicken breast

1 cup crunchy peanut butter

1/4 cup cilantro

1/2 cup chili sauce

1 teaspoon kosher salt

1/2 teaspoon cayenne

1/2 teaspoon pepper

1/4 cup fresh lemon juice

1/4 cup brown sugar

1/2 cup soy sauce

1 cup scallions

3 teaspoons garlic

2 cups green bell pepper

24 skewers bamboo skewer

1 cup cilantro
 

Preparation / Directions:


cut each breast half lenghthwise into 4 slices combine peanut butter, cilantro, chili sauce, salt, cayenne, pepper, lemon juice, sugar, soy sauce, scallions, and garlic-mix well add chicken strips and toss to coat well cover and chill for 6-48 hours thread chicken strips and diced bell peppers onto bamboo skewers broil or grill for 3 minutes on each side, until lightly browned remove to a serving platter garnish with minced cilantro serve warm or at room temperature
