Lemon Herb Chicken

Ingredients:


3 1/2 pounds chicken -- cut up and skinned

1/2 cup olive oil

1/4 cup lemon juice

2 small garlic cloves -- crushed

3 tablespoons chopped fresh oregano *Or*

1 tablespoon dried whole oregano

1/8 teaspoon salt

1/8 teaspoon pepper

1 teaspoon Fresh oregano -- (optional)

6 slices Lemon slices -- (optional)
 

Preparation / Directions:


Place chicken, meaty side down, in a 13 x 9 x 2 inch baking pan. Combine olive oil,lemon juice, garlic, oregano, salt, and pepper, mixing well. Pour mixture over chicken; marinate in refrigerator 2 hours, turning occasionally. Bake, uncovered, at 350 F for 30 to 40 minutes. Turn chicken over; broil 6 inches from heat for 5 minutes or until lightly browned. Garnish with fresh oregano and lemon slices, if desired.
