Lemon Butter Chicken

Ingredients:


2 1/2 Pounds fryer -- cut up (2 1/2 to 3)

1/3 Cup butter or margarine

1/3 Cup lemon juice

1/4 Cup parsley -- snipped

1 teaspoon salt and pepper
 

Preparation / Directions:


Place chicken pieces in an 8 inch square dish, skin side down, with thick= er portions to outside edge. Cover with wax paper. Microwave at medium high (70%) 14 minutes. Drain. Turn chicken pieces over, keeping thicker portio= ns to outside edge. Place butter in a 1 cup measure. Microwave at high (100%) until melted, 4= 5 seconds to 1 minute. Stir in lemon juice and parsley. Pour lemon-butter mixture over chicken pieces. Cover with wax paper. Microwave at medium high (70%) until tender, 10 to 12 minutes. Makes 4 servings.
