Herb Roasted Chicken

Ingredients:


7 pounds roasting chicken -- (6-7 pounds)

1/4 cup unsalted butter -- room temperature

2 tablespoons chopped fresh herbs like rosemary and thyme

1 teaspoon grated lemon peel

1 tablespoon fresh lemon juice
 

Preparation / Directions:


Preheat oven to 450 degrees. Rinse chicken; pat dry. Mix butter, herbs, lemon peel and juice in small bowl. Season to taste with salt and pepper. Slide hand under skin of chicken breast to loosen skin from meat. Rub half of butter mixture over breast under skin. Spread remaining butter over outside of chicken. Season outside of chicken lightly with salt and pepper. Truss chicken and place in heavy large roasting pan. Roast chicken 20 minutes. Reduce oven temperature to 375 degrees. Roast chicken until meat thermometer inserted into thickest part of thigh registers 175 degrees, about 1 hour 15 minutes. Transfer chicken to platter. Let stand 5 minutes before carving. Prep Time: 10 minutes Cook Time: 1 hour 25 minutes Makes: 4 servings This recipe uses an herb butter and lemons to add extra flavor to the chicken.
