Chicken Picatta

Ingredients:


2 whole boneless skinless chicken breasts -- halved

1 spray nonfat cooking spray

2 cups soft bread crumbs

1 tablespoon granulated garlic

1 tablespoon parsley flakes

1 teaspoon lemon-pepper marinade

1/2 cup grated parmesan cheese

1 medium lemon juiced -- (about 2 tbsp)
 

Preparation / Directions:


Preheat the oven to 350 degrees. Spray each chicken breast half. Mix bread crumbs, garlic, parsley flakes, lemon-pepper marinade, and cheese. Roll each breast half in this mixture. Lay side by side in a shallow baking dish that has been heavily sprayed. Squeeze lemon juice over breasts. Bake 15 to 20 minutes, or until breasts resist the pressure of a finger. 4 servings/Serving size: 1 chicken breast half
