Zesty Mozzarella Chicken

Ingredients:


1 large egg white -- lightly beaten

2 tablespoons milk

1 cup dry bread crumbs

2 tablespoons grated

1 Cup parmesan cheese

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon garlic powder

1/4 teaspoon cayenne

1/4 teaspoon pepper

1/4 teaspoon dried oregano

8 medium boneless skinless chicken breast halves

1 1/4 cups buffer or margarine

1 can tomato sauce -- (8 ounces)

1 teaspoon dried basil

1 cup shredded mozzarella cheese
 

Preparation / Directions:


In a shallow bowl, combine egg white and milk. In another bowl, combine the bread crumbs, Parmesan cheese-and seasonings. Dip each chicken breast in the egg white~ mixture, then in the crumb mixture. Melt but- ter in a skillet; brown chicken on both sides until no longer pink and juices run, clear. Meanwhile, heat tomato sauce and basil un- til warm. WhJn chicken is done, sprinkle with mozzarella cheese. Remove from the~ heat and cover for 2-3 minutes or until cheese melts. Serve with tomato-basil sauce.
