Sweet 'n Sour Chicken Dinner

Ingredients:


6 medium carrots -- cut in 1/2 inch chunks

1/2 cup green pepper -- chopped

1/2 cup onion -- chopped

3 medium chicken breasts -- boneless

10 ounces jar sweet-sour sauce

1 can pineapple chunks (16 oz.) drained

3 tablespoons cornstarch

3 tablespoons cold water

3 Cup rice -- cooked (hot)
 

Preparation / Directions:


In crockpot place carrots, green pepper, and onion. Top with chicken breasts. Pour sweet-sour sauce and pineapple chunks over all; cover. Cook on LOW for 7 to 8 hours (or HIGH for 3-1/2 to 4 hours). Remove chicken, keep warm. Blend cornstarch and water, stir into juices. Cover, cook on HIGH for 10 to 15 minutes or till thickened. Serve over hot cooked rice. Makes 6 servings.
