Creole Chicken

Ingredients:


1 medium broiler-fryer chicken -- cut up

1 medium green pepper -- chopped

6 medium green onions -- chopped

16 ounces tomatoes -- cut up

6 ounces tomato paste

1/4 pound cooked ham - about 3/4 cup -- cubed

1 teaspoon salt

4 dashes hot pepper sauce

1/2 pound smoked or polish sausage -- sliced

3 cups cooked rice
 

Preparation / Directions:


In slow-cooking pot, combine chicken, pepper, onions, tomatoes, tomato paste, ham, salt and pepper sauce. Cover and cook on low for 4 to 5 hours. Turn control to high. Add sausage and cooked rice. cover and cook on high for 15 to 20 minutes.
