Grilled Chicken with Charred Peppers

Ingredients:


4 teaspoons olive oil

2 cloves garlic -- minced

4 medium chicken breasts -- boned and skinned

1/4 teaspoon salt

1/4 teaspoon pepper -- coarsely ground

1 medium green pepper -- cut into 1 inch strips

1 medium red pepper -- cut into 1 inch strips

1 medium yellow pepper -- cut into 1 inch strips
 

Preparation / Directions:


Grill Directions: In small cup, combine 2 teaspoons of the oil and garlic; mix well. Place chicken in shallow glass baking dish. Brush garlic mixture over chicken, coating all sides. Sprinkle with salt and pepper. Cover. Refirgerate 1 hour to marinate. Meanwhile, heat grill. In large bowl, combine peppers with remaining 2 teaspoons oil; toss to coat. When ready to grill, place chicken on gas grill over medium heat or on charcoal grill 4-6 inches from medium coals. Cook 14-18 minutes or until chicken is fork-tender and juices run clear, turning once. During the last 5-8 minutes of cooking time, place bell peppers on grill. Cook until lightly charred, turning once. Serve peppers with chicken. Note: To broil chicken, place on broiler pan; broil 4-6 inches from heat using times above as a guide. Add bell peppers to broiler pan as directed above. Note: This is a great recipe for entertaining because the chicken can be marinated in the refrigerator overnight. The bell pepper can be cut and tossed with oil and refrigerated overnight, too.
