1 cup basmati or texmati rice
3 tablespoons butter or margarine
1 medium onion -- minced
1/2 teaspoon salt
1 medium green onions -- for garnish

Preparation / Directions:

Heat 6 C water to boling. Add rice and cook, uncovered, 10 min., stirring occasionally. Drain rice, rinse with cold water. Drain well. In nonstick 10" skillet, melt 1T margarine over med. heat. Add onion and cook 10 min. or till tender. Addremaining 2T margarine and cook 1 min. or till melted. Add cool rice, salt and 1/4 C water and stir till rice is evenly coated. Spread mixture in even layer on bottom of skillet. Cover and cook 15-20 min, until riceis tender and golden crust forms on bottom. With wide spatula, transfer rice to shallow serving bowl, crust side up. Garnish with green onions.
