Barbecue Baked Chicken Wings

Ingredients:


2 pounds chicken wings

2 tablespoons olive oil

1 medium onion -- finely chopped

3 cloves garlic

1 cup water

1/2 cup tomato paste

3 tablespoons red-wine vinegar

2 tablespoons dijon mustard

2 tablespoons brown sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1 dash cayenne pepper
 

Preparation / Directions:


1. Rinse the wings and pat dry. Remove the wing rips with a sharp knife. Reserve the wings.

2. Heat the oil in a saucepan over medium heat.

3. Cook the onion and garlic, stirring, for 10 minutes or until soft. Add remaining ingredients. Simmer for 20 minutes. Let sauce cool.

4. Toss the wings with sauce to coat. Cover; refrigerate 1 hour.

5.a. Place the wings on a rack in a broiler pan. Bake at 450'F. for 40 to 45 minutes, brushing occasionally with more sauce. Serve.

5.b. GRILL IT! On a gas grill, cook the wings over a low flame with the lid closed, turning to prevent burning, brushing occasionally with more sauce. Serve.

5.c. On a charcoal grill, place the wings away from the direct flames with the lid closed, turning to prevent burning, brushing occasionally with more sauce. Serv
