3 pounds chicken wings
1 teaspoon crushed red pepper
1 cup flour
1/2 teaspoon cayenne pepper
1 teaspoon salt and pepper to taste
1/3 cup hot pepper sauce
2 Cup vegetable oil -- up to 3 inch
1 cup blue cheese dressing
1/4 pound butter + one stick
4 ribs celery -- cut into sticks

Preparation / Directions:

Shake the chicken in a paper bag with the flour, salt and pepper until well coated. Heat the oil in a deep fat fryer to 350F. Shake off any excess flour from chicken and place in the fat. Fry until deep golden brown all over. While the chicken is frying, melt the butter with the red pepper flakes and cayenne until bubbling. Remove from heat and whisk in the hot pepper sauce. Remove the chicken, drain on paper towels and toss with the spicy butter sauce. Remove and serve with blue cheese dressing and celery sticks. Makes four servings.
