Stuffed Peppers

Ingredients:


6 medium peppers

1 cup boiling water

1/2 cup butter -- divided

1 teaspoon dill seed

1 teaspoon paprika

1 1/2 teaspoons salt

1 teaspoon dried basil

1/2 teaspoon ground coriander seed

3 cups hot mashed potatoes

1 cup grated cheddar cheese
 

Preparation / Directions:


Slice lid off peppers , cut away center piece of lid. Clean inside of pepper. Plunge peppers into boiling water for 2 to 3 minuted, remove, and drain upside down. Pour 4 tablespoons of the melted butter into a saucepan over low heat. Saute dill, paprika, salt, basil, and coriander. Saute briefly and remove from the heat. Mix potatoes. 3/4 of the cheese and the herbed butter in a bowl until smooth. Stuff peppers. Sprinkle rest of cheese on top. Replace lids on peppers. Place in a baking dish, brush with rest of butter and bake at 350*F. for 30 to 40 minutes or until peppers are tender and lightly browned.
